Sometimes you just have to skip the hollandaise sauce. Sure, it's delicious, but too much too often it'll catch up to you in a not so pleasant way. I'll never make eggs benedict at home. The sauce alone I one thing and the stress of cooking everything in a timely matter, I'd rather enjoy a meal stress free and made incredibly well as I don't have it often. This recipe at home i'll make any time as it's a tasty healthier alternative. Bringing eggs benedict and Florentine together without the hollandaise! I also used some egg poacher cups I bought. They're so easy to use, cheap and will provide perfect eggs every time!
What you need:
2 Eggs Margarine or butter 1 Large bunch baby spinach 1 tsp garlic 1 tsp red pepper flakes 2 Slices deli meat (ham or chicken) 1 English muffin, toasted Salt and pepper to taste Cayenne pepper or hot sauce for kick. |
Instructions:
Fill a small skillet with 1/2" water and heat until simmering. Grease egg poacher cups with margarine and crack an egg in each. Place egg cups in water and cover skillet. Cook 5-7 minutes for desired doneness. Meanwhile, melt 1 Tbsp margarine in a medium skillet over medium heat. Add garlic and stir for about 30 seconds, then add spinach and red pepper flakes. Toss mixture for 1 minute or until spinach wilts. Heat deli meat in skillet partway through. Top English muffin with deli meat, spinach mixture and egg. Season with salt and pepper. Add cayenne pepper or hot sauce to spice it up! |
