Avocado Pasta
I love using avocados in a sauce. It's smooth, velvety and adds a richness to a dish without the typical unhealthy fats and carbs that could go with it. I love fats and carbs, but it's nice to have a dish sometimes that has lots of flavour and you don't have to feel guilty eating it. Balanced diet anyone? The creaminess of the avocado sauce and freshness from the basil will have everyone falling in love with pasta night.

Ingredients:
- 4 tablespoons olive oil, divided
- 1 large shallot, chopped
- 5 cloves garlic, chopped
- ½ cup chicken stock
- 2 ripe avocados, chopped
- juice of 1 lime
- ½ teaspoon fresh ground black pepper
- kosher salt
- 700g fresh cheese tortellini
- 1 bunch fresh asparagus, ends removed and chopped into thirds
- 2 cup broccoli florets
- 1 cup cherry tomatoes, halved
- 1 cup chopped fresh basil leaves
