Basil Tomato Sauce
My cousin bought me David Rocco's 'Made in Italy' for my birthday in 2013, and I learned to make a basic tomato pasta sauce, because of course that's where you have to start. Based on what I learned and some side research, I came up with my own basic sauce. I don't cook Italian cuisine often, but when I do, it's good to have a few recipes up my sleeve. I love mushrooms and find it adds a meaty and earthiness to the sauce. Not a fan of mushrooms? Ditch the ingredient altogether.

Ingredients:
- ¼ cup olive oil
- 4 lbs tomatoes on the vine, seeded and chopped
- ½ large, sweet onion, diced
- 3 to 4 cloves garlic, minced
- ½ cup brown cremini mushrooms, chopped (optional)
- kosher salt and fresh ground black pepper
- ⅛ cup finely chopped fresh thyme
- ¼ cup finely chopped fresh basil
- ¼ cup chopped fresh parsley
