- 6½ tablespoons red wine
- 1 tablespoon giavi (See note*)
- 2 tablespoons fish sauce
- 1 teaspoon ground cinnamon
- 2 tablespoons grated fresh ginger
- 6 cloves garlic, crushed
- 2 tablespoons five spice
- 2 teaspoons kosher salt
For Stew:
- 1Kg beef round or pork shoulder, cut into 1" chunks
- 3 tomatoes on the vine
- 750ml chicken stock
- 250ml red wine
- 2 cinnamon sticks
- 3 star anise
- 1" piece of ginger, thinly sliced
- 2 tablespoons fish sauce
- 200g carrots, peeled and trimmed, sliced into ½" pieces
