Blueberry Banana Bread
Whether you use fresh or frozen, blueberries add a delightful burst of sweetness to this classic banana bread recipe. I love blueberries and I tend to buy them in bulk during the short-lived berry season in summer. I toss my berries in flour prior to folding into the batter as this will help keep them from sinking. When in season, blueberries burst with flavour and I highly recommend buying fresh. They're also incredibly cheap. In the off-season, save your money and go frozen and simply let the blueberries thaw and pat dry excess moisture.

Ingredients:
- 4 tablespoons unsalted butter, softened
- ½ cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 2 overly ripe bananas, mashed
- 1 cup all-purpose flour, divided
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- ¼ teaspoon fine salt
- ¾ cup fresh blueberries tossed with 1 teaspoon all-purpose flour, plus extra blueberries for topping
