Blueberry Bran Muffins
Here's a recipe you cannot feel guilty eating at all! These are a healthy treat and great for the whole family, even babies. I bake these muffins using mashed banana instead of sugar to follow recommended guidelines so that everyone at home, including our daughter under 1, can enjoy. Tossing the blueberries with some of the flour mixture prior to adding to the batter will prevent them from sinking to the bottom of your muffin. Cool hack, right?

Ingredients:
- 1½ cups wheat bran
- 1 cup milk
- ½ cup unsweetened applesauce
- 1 egg, room temperature
- ½ cup mashed banana (about 1 to 2 bananas) or ½ cup brown sugar
- ½ teaspoon vanilla extract
- ½ cup all-purpose flour
- ½ cup whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ¼ teaspoon fine salt
- 1 cup fresh blueberries plus extra blueberries for topping
