Cajun Seasoning
I love having seasonings on hand when I want to make something for dinner that takes as little time as possible, is healthy(ish) and has lots of flavour. I buy and use dry rubs all the time, especially for pork tenderloin. I find Cajun dishes to be so divine and heartwarming - jambalaya, blackened fish and gumbo are some of my favourites. After exploring and testing various Cajun seasonings, I put together this recipe. I make it in large batches use most commonly use it for a dry rub and seasonings for tacos. I like the kick of spice from the smoked paprika and cayenne.

Ingredients:
- 3 tablespoons smoked paprika
- 2 tablespoons kosher salt
- 2 tablespoons garlic powder
- 1 tablespoon fresh ground black pepper
- ½ tablespoon ground white pepper
- 1 tablespoon onion powder
- 1 tablespoon dried oregano
- 1 tablespoon cayenne
- ½ tablespoon dried thyme
