Cajun Shrimp Tacos with Chipotle-Guacamole
These are one of my favourite tacos to make because it incorporates my favourite ingredients. I love Cajun seasoning, I love tacos, and I am obsessed with the smoky and spicy guacamole (compliments of my husband). I use my own Cajun seasoning and always have pickled vegetables on hand. This dish is healthy and is quick to make - perfect for a weeknight meal.

Instructions:
- 2 to 3 teaspoons hot sauce
- ½ cup low fat sour cream
- 2 pounds medium shrimp, shelled and deveined
- 2 to 3 tablespoons Cajun seasoning, combined with 1 to 2 teaspoons freshly ground black pepper
- 2 tablespoons olive oil
- 200 g chunky guacamole
- ½ small red onion, finely chopped
- 1 chipotle chili in Adobo sauce, chopped
- 2 to 3 teaspoons Adobo sauce
- 6 small corn tortillas
- pickled sliced radishes or jalapenos
- thinly sliced purple cabbage
- fresh cilantro
- lime wedges
