Mango Salsa
I am a huge fan of fresh mango. It's so fresh, so juicy, great on its own or can be used as an accompaniment to several meat dishes. Being a fan of salsas, I wanted to make one that was sweet with some heat. If mangos aren't in season, go for frozen and thaw beforehand. Serve it with salmon, pork or with a bag of tortilla chips.

- 2 cups fresh mango, diced
- 2 jalapenos, seeded, finely chopped
- ½ cup chopped red onion
- ¼ cup packed fresh cilantro, chopped
- 1 large lime, juiced
- kosher salt
