Peanut Butter Cookies
Everyone I know who loves peanut butter also enjoys a good peanut butter cookie. To me, the perfect peanut butter cookie has some chew, some crunch, isn't dense, and has a wonderful buttery flavour. While I'll always enjoy certain bakery peanut butter cookies over my own, I'm happy with what I can make.

Ingredients:
- 1 cup natural smooth peanut butter
- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- ½ cup brown sugar
- 1 egg, room temperature
- ½ teaspoon vanilla extract
- 1½ cups all-purpose flour
- ¾ teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon fine salt
- 1 cup peanut butter chocolate chips (optional)
- granulated sugar for sprinkling (optional)
Instructions:
- Preheat oven to 350-degrees.
- In a large bowl, cream together peanut butter and butter. Add sugars and mix well. Beat in egg and vanilla. Set aside.
- In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
- Add dry mixture to wet and stir until just combined. Stir in peanut butter chocolate chips.
- Roll about 1 tablespoon each of dough into balls and flatten on a parchment-lined baking sheet. Sprinkle lightly with sugar on top.
- Bake 10 minutes or until cookies are golden brown.
- Let cookies cool slightly before transferring to a wire rack.
- Store completely cooled cookies in an airtight container for up to 5 days.
