Pork & Dan Dan Noodles
The first time I learned to make this Chinese street food dish was in a cooking class. While it was delicious, I did some research into what a traditional dish would contain. Turns out my own recipe, which uses some of my favourite Chinese ingredients, similarly reflects the classic dish in my Chinese cookbook by Fuschia Dunlop as well as a handful of my own personal additions. Bringing together warmth, spice and a bit of heat, this dish is incredibly easy to make despite the long list of ingredients.

Noodles and Pork:
Sauce:
- 2 tablespoons peanut oil
- 3 tablespoons soy sauce
- 1 tablespoons Chinese black vinegar
- 1 tablespoon shaoxing wine
- 1 teaspoon chilies in oil
- 1 teaspoon chili bean sauce
- 2 teaspoons water
- ½ tablespoon sesame oil
- 2 tablespoons sesame paste
- t teaspoon sugar
- ½ tablespoon oyster sauce
- pinch white pepper
Noodles and Pork:
- 1 package udon noodles or rice vermicelli
- 2 to 3 teaspoons peanut oil
- 5 garlic cloves, minced
- equivalent amount of ginger, minced
- 500g ground pork
- 2 teaspoons Chinese five spice
- 2 teaspoons soy sauce
- toasted sesame seeds
- chopped green onions or cilantro
