Pork Tenderloin with Blueberry Sauce
I'm a huge fan of pork tenderloin. It's incredibly cheap to buy and lends itself to a variety of ways to prepare. It's one of my favourite week-night meats to prepare because it can require very little effort to cook. You can use a spice rub, or just add some salt and pepper and serve with a fruity sauce or salsa. Pork and blueberries are a perfect combination. The warm, sweet and tart notes from the blueberry sauce make this a perfect fall dish.

Ingredients:
Blueberry Sauce:
- 1 lb pork tenderloin
- ½ tablespoon fresh minced thyme
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon fresh ground pepper
- ½ teaspoon smoked paprika
Blueberry Sauce:
- ¾ cup fresh blueberries
- 2 cloves garlic, minced
- 2 to 3 tablespoons sugar
- 1 cinnamon stick
- ½ cup balsamic vinegar
