Quick Pickled Jalapenos
I love jalapenos, especially when they're pickled. They're great for sandwiches, tacos, salads and more. We've been growing our own jalapenos so we always have them on hand. Sweet, tangy and spicy, these will get your taste buds popping! You can use any type of vinegar, but I prefer apple cider vinegar for a unique and sweet flavour profile. You can also go a bit further and add sliced onions and garlic, or whole spices such as peppercorns or cumin seeds. Be creative and enjoy!

- 1 cup water
- 2 tablespoons granulated sugar
- 2 teaspoons kosher salt
- 7 to 8 jalapenos, thinly sliced
