Sausage and Leek Fettuccini
Ingredients:
- 400g fresh fettuccine
- 2 teaspoons vegetable oil
- 1 lb hot Italian sausage, removed from casings
- 2 shallots, peeled and thinly sliced
- 2 leeks, trimmed, whites sliced
- 6-8 cremini mushrooms, trimmed and sliced
- 6 cloves garlic peeled and minced
- 2 tablespoons unsalted butter
- 1 cup vegetable stock
- 398ml can fire-roasted tomatoes
- red pepper flakes, kosher salt and fresh ground pepper to taste
- ¼ cup fresh parsley minced, plus more for serving
