Spicy Black Bean Dip
I am a sucker for chips and dip - french onion being my favourite. Bean dips are a close second. The first recipe I ever made for a bean dip had 4 ingredients and it was quite bland. Over the years, I've tried making my own, adding and adjusting ingredients. I enjoy having the smokiness from the chipotle peppers and Adobo sauce. The cilantro and green onions also add a nice freshness to the dip. Serve at your next patio party!

Ingredients:
- ¼ cup extra virgin olive oil
- 2 small onions, chopped
- 4 cloves garlic, chopped
- 1 jalapeno pepper, chopped
- 2 to 3 chipotle peppers in Adobo sauce, chopped
- 2 teaspoons Adobo sauce
- 2 (15½ oz) cans black beans, rinsed and drained
- 2 teaspoons salt
- ½ teaspoon ground cumin
- 4 tablespoons fresh lime juice
- 3 tablespoons water
- ½ cup chopped fresh cilantro or green onion
