Strawberry Oat Bars
Ingredients:
- 1 cup all-purpose flour
- ¾ old-fashioned oats
- ½ + ⅓ cup granulated sugar, divided
- ½ cup golden brown sugar
- ¼ teaspoon fine salt
- ¼ cup cocoa powder
- ¾ unsalted butter, melted
- 2 cups chopped fresh strawberries
- 2 tablespoons lemon juice
- 2 teaspoons corn starch
Instructions:
- Preheat oven to 350 degrees.
- Line an 8x8" pan with parchment paper and set aside.
- In a large bowl, combine flour, oats, ½ cup granulated sugar, golden sugar, salt and cocoa powder. Stir in butter until a sandy, crumbly mixture forms.
- Set aside about 1 cup of mixture and transfer remaining into the pan, packing mixture to create an even, flat layer. Set aside.
- In a separate large bowl, combine strawberries, remaining sugar, lemon juice and corn starch.
- Evenly distribute strawberry mixture over crust.
- Sprinkle remaining crumble topping on top and press to slightly flatten.
- Bake 50 to 55 minutes until edges and centre are set.
- Move pan to a wire rack and cool completely before slicing into even squares or removing bars from pan.
- Refrigerate in a sealed container up to a week.
