Tofu Parmesan
I never imagined I would love a tofu dish this much. I don't even miss the chicken. After finding a tofu parmesan recipe from Eating Well, I decided to make my own version. I use my own homemade pasta sauce, but any jarred tomato sauce will suffice. I love the nutty and sweet flavour of gouda, but of course you can always use classic mozzarella! I've eaten this on its own or in smaller portions served with pasta! Enjoy!

Ingredients:
- 300 to 400g extra firm tofu
- 2 eggs
- 2 tablespoons mayonnaise
- 1 teaspoon kosher salt, plus extra for seasoning
- ½ teaspoon fresh ground black pepper, plus extra for seasoning
- ¼ cup all-purpose flour
- ½ cup panko bread crumbs
- 1½ tablespoons Italian seasoning
- ½ teaspoon paprika
- ¼ teaspoon cayenne
- 3 tablespoons olive oil
- 1 cup thinly sliced cremini mushrooms
- ½ sweet onion, finely chopped
- 2 to 3 cups pasta sauce
- ¼ fresh grated parmesan
- ½ cup fresh grated gouda
- ¼ cup chopped fresh basil leaves
