Tomato and Mascarpone Pasta
Ingredients:
- 2 tablespoons olive oil
- ½ sweet onion, diced
- 3 to 4 garlic cloves, minced
- 2 tablespoons tomato paste
- ⅓ cup vegetable stock
- 28 oz can crushed tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon fresh ground black pepper
- 1 teaspoon kosher salt
- ¼ teaspoon chili flakes
- 1 lb fresh or dried pasta, such as gemelli
- ½ cup mascarpone cheese, room temperature
- ½ cup grated fresh parmesan cheese plus extra for garnish
- kosher salt, to taste
- fresh basil leaves
