Baked Haddock with Mango Salsa & Coconut Cauliflower Rice
I love having fresh salsas with a meal, especially mango salsa during the summer when mangoes are in season. My sweet and spicy mango salsa goes so well with fresh and mildly sweet haddock, which is topped on Thai-inspired coconut cauliflower rice. Easy, fresh and flavourful, add this dish to your summer menu rotation. Any white fish will suffice, but I typically use haddock or mahi mahi as my go-to white fish.

Ingredients:
- 2 haddock fillets, about 120g each
- ½ plus ⅛ teaspoon kosher salt
- ½ teaspoon fresh ground black pepper
- 2 cloves garlic, chopped
- 1 small sweet onion, coarsely chopped
- 1 tablespoon coconut oil
- half head cauliflower pulsed into 2 cups cauliflower rice
- 1 tablespoon coconut oil
- ½ cup coconut milk
- ½ tablespoon lime juice
- 1 tsp lime zest
- 2 tablespoons chopped fresh cilantro
